Millet rice is parboiled and unpolished, which helps to keep the nutrients in tact. They are readily digestible, nutrient-dense, gluten-free, and contain a lower percentage of glucose than rice, lowering the risk of diabetes. When opposed to paddy rice, which has just 6.8% protein but 78.2% carbohydrates, little millet has 7.7% protein and 67 percent carbohydrates.
